Cake Mix Banana Bread

I'm not even sure where I heard about this recipe.  It is SO simple, you don't even need to write it down:)  It is quick, easy and yummy!!


Cake Mix Banana Bread
Ingredients:
1 cake mix (I used yellow)
2 eggs
1 cube of butter, melted (1/2 cup)
5 bananas
Directions:  Preheat oven to 350 degrees.  Mix all ingredients together, I didn't even mash my bananas before adding them to the mixer.  I just broke small pieces off the banana and added them piece by piece as the mixer was mixing.  Pour into 2 greased loaf pans.  Bake at 350 for 45 minutes.  I always allow my bread to cool for ~5 minutes when I take it out of the oven and then take it out of the pan to continue cooling.

Quick, Easy, Healthy Breakfast

I know...you've all made oatmeal before :)....but I thought I'd share our favorite quick and easy breakfast.  Oh, and healthy.  I make this for my husband for breakfast nearly every Mon-Thurs @ 4:15am before he leaves for work.

With the sweetness of the bananas you don't need much brown sugar.  I really LOVE the crunch that the pecans add.

I'm going to tell you how I made it every morning.  I have a ceramic cook-top stove, so if you have something different...you will need to adjust the directions.

Oatmeal with banana and pecans

Ingredients:
1 cup water
1/2 cup quick cooking oats
1 banana
~1/4 cup chopped pecans
brown sugar
milk

Directions:  In a small pot bring one cup of water to boil over high heat.  When the water begins to boil, stir in 1/2 cup oats and turn burner off.  I move my pot off of the burner for 30 seconds to a minute to let the burner cool just a bit.  Then I put the pan back on the burner to continue cooking(with the burner turned off) while I do other things...like pack a lunch.  When the oatmeal is the desired consistency, pour oatmeal into a bowl, top with sliced banana, pecans, brown sugar to taste and desired amount of milk.

Applesauce Banana Bread

This banana bread uses applesauce in place of the oil or shortening.  I used some applesauce that I bottled with very little sugar a couple of years ago.  You might need to adjust your sugar if you use sugar free applesauce..

Applesauce Banana Bread

Ingredients:
1/2 cup applesauce
1/2 cup sugar
2 eggs
1/2 cup buttermilk (1 T vinegar, fill to 1/2 cup with milk)
3 lg. mashed bananas
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1 cup semi-sweet chocolate chips(optional)

Directions:  Beat together applesauce, sugar and eggs.  Add buttermilk and mashed bananas.  Add flour, baking soda, and salt.  Beat with a spoon, add vanilla and chocolate chips.  Bake at 375 degrees for 1 hour in greased loaf pan.  Or...if you use 4 mini loaf pans, I cook mine for 25 minutes.

Banana Crumb Muffins

I LOVE banana cake, banana bread and these banana muffins!! I got this recipe years ago from a Taste of Home magazine.




Banana Crumb Muffins
Ingredients:
  • 1 1/2 cup all-purpose flour
  • 1 t. baking soda
  • 1 t. baking powder
  • 1/2 t. salt
  • 3 large ripe bananas, mashed
  • 3/4 cup sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter or margarine, melted
Topping:
  • 1/3 cup packed brown sugar
  • 1 T. all-purpose flour
  • 1/8 t. ground cinnamon
  • 1 T. cold butter
Directions: In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. Bake at 375 degrees for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Makes about 1 dozen.

Banana Cake with Cream Cheese Frosting

I haven't had banana cake since the occasional office party when we lived in Oregon. I love it and was SO happy when I saw it at Gourmified. I didn't get a good picture of mine. You should go check out Lisa's picture of her cake here(seriously SO pretty!). If you have some bananas that are past their prime and turning black...try this recipe.


Banana Cake with Cream Cheese Frosting
Ingredients:
  • 2 1/2 c. flour
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 2/3 c. sugar
  • 1 1/4 tsp. soda
  • 2/3 c. butter, at room temperature
  • 4 mashed bananas, large
  • 2 large eggs
  • 2/3 c. buttermilk or plain yogurt
  • 2/3 c. chopped nuts (optional)
  • 1 tsp. vanilla

Directions: Preheat oven to 350 degrees. Sift together: flour, baking powder, salt, sugar and soda. Then add: butter, and bananas. Beat thoroughly, then add: eggs, buttermilk, chopped nuts and vanilla. Mix until well combined. Pour into a greased & floured 9x13 pan. Bake at 350 degrees for 40 minutes. When cooled, top with Cream Cheese frosting. Recipe below.

Cream Cheese Frosting

Ingredients:

  • 8oz. cream cheese, at room temperature
  • 2 c. powdered sugar
  • 2 tsp. vanilla
  • 1/2 c. butter

Directions: Combine all ingredients until smooth.

Banana Bread....with or without chocolate

I LOVE banana bread. I especially love it with chocolate!! I have one son that will not eat it with chocolate chips and two that are like me and love it with the chocolate. I always make the banana bread in my 4 loaf mini loaf pan and make one without chocolate. The bread doesn't last long around here!! I hope you enjoy it as much as we do.

Banana Bread
Ingredients:
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup sour milk(1 T vinegar)
  • 3 large mashed bananas
  • 2 cups flour
  • 1 t baking soda
  • 1 t salt
  • 1 t vanilla
Directions: Cream shortening, sugar and eggs. Mix in sour milk and bananas. Add flour, baking soda, and salt and mix well. Mix in vanilla. Add chocolate chips(if desired). Bake at 375 degrees for approx. 30 minutes in 4 mini greased loaf pans or approx. 1 hour in one regular greased loaf pan.
