Banana Cake with Cream Cheese Frosting
Ingredients:
- 2 1/2 c. flour
- 1 1/4 tsp. baking powder
- 1 tsp. salt
- 1 2/3 c. sugar
- 1 1/4 tsp. soda
- 2/3 c. butter, at room temperature
- 4 mashed bananas, large
- 2 large eggs
- 2/3 c. buttermilk or plain yogurt
- 2/3 c. chopped nuts (optional)
- 1 tsp. vanilla
Directions: Preheat oven to 350 degrees. Sift together: flour, baking powder, salt, sugar and soda. Then add: butter, and bananas. Beat thoroughly, then add: eggs, buttermilk, chopped nuts and vanilla. Mix until well combined. Pour into a greased & floured 9x13 pan. Bake at 350 degrees for 40 minutes. When cooled, top with Cream Cheese frosting. Recipe below.
Cream Cheese Frosting
Ingredients:
- 8oz. cream cheese, at room temperature
- 2 c. powdered sugar
- 2 tsp. vanilla
- 1/2 c. butter
Directions: Combine all ingredients until smooth.
