German Pancakes cooked in muffin pans

I really like German pancakes, but my favorite parts are always the edges.  When I saw this idea at Latter Day Mommy, I knew this is how I would make German pancakes from now on.  I love the idea of individual size pancakes...and everyone gets the yummy edge pieces!!  We like to serve ours with fresh strawberries and a sprinkling of powdered sugar.

German Pancakes cooked in muffin pans
Ingredients:
6 eggs
1 cup all-purpose flour
1 cup milk
1 Tablespoon granulated sugar
1/2 teaspoon salt
1/2 cube butter (1/4 cup)
2 muffin pans

Directions:  Preheat oven to 375 degrees.  In a bowl, beat together all ingredients except for the butter.  Cube the butter into small pieces and evenly disperse between the 2 muffin pans(24 muffins).  Put the pans in the oven for a couple of minutes while it is preheating to melt the butter.  When butter is melted remove from oven and pour some batter into each compartment of the muffin pans until each muffin compartment has approximately the same amount of batter.  Cook for about 10-15 minutes, or until it is golden brown.  The muffins will rise quite a bit, so make sure that your rack isn't too high or too close to the rack above it.

Strawberry Syrup

I LOVE fruit syrup!!  Sunday morning I made Buttermilk Waffles and decided to make some strawberry syrup to go with them.  I found this recipe at Taste of Home.  We all really loved this syrup!  My oldest boy said that from now on he will have Peach Vanilla Syrup with pancakes, Buttermilk Syrup with French toast, and this syrup with waffles.  I can't wait to try this with crepes too.

Strawberry Syrup

Ingredients:
1 pint fresh strawberries, halved
3/4 cup sugar
2 tablespoons corn syrup
1-1/2 teaspoons lemon juice
1/2 teaspoon butter
Waffles or pancakes

Directions:  Place strawberries in a blender(or food processor); cover and process until pureed. Transfer to a small saucepan; add the sugar, corn syrup, lemon juice and butter. Bring to a boil; cook and stir for 1 minute. Skim off foam. Strain seeds if desired. Serve warm with waffles or pancakes. Refrigerate leftovers; warm before serving. Yield: about 1-1/2 cups.

Peach Vanilla Syrup

I received an email with this recipe from Pam a year ago. We LOVE this syrup! My 10 year old won't eat pancakes with anything else. I made another batch today and will be making more tomorrow. Try this syrup with whole wheat blender pancakes...SO yummy!! FYI...Basha's has peaches on sale 2 pounds for $1 this week.

Peach Vanilla Syrup
Ingredients:

  • 5 cups peaches(pureed)
  • 2 cups sugar
  • 2 T. lemon juice
  • 2 t. vanilla

Directions: Bring first 3 ingredients to a boil, and simmer for 5 minutes, stirring constantly. Add vanilla and stir well. Pour into hot, sterile jars and screw the hot lids and rings on tight.

**Edited to add: Process the syrup in a boiling hot water bath for ~15 minutes, to make sure that any bacteria is killed. Start timing when the water comes to a full boil. Set jars out and listen for the pop to ensure they have sealed:)

Here is a link that Sarah D left about the safety of NOT hot water bathing...http://www.foodinjars.com/2010/08/canning-101-why-you-shouldnt-can-like-your-grandmother-did/ Thanks Sarah!!

Whole Wheat Blender Pancakes

I don't have a lot of time today, but I wanted to post this yummy recipe!! We love to have these for a quick healthy breakfast. I have a lot of whole wheat kernels that I have been storing and this is a great way to use/rotate my storage. My husband usually just grabs a few on his way out the door and eats them plain. The rest of us drown them in syrup and a couple hours later my 2 year old comes asking to eat some like a cookie(plain). I have seen several versions of this pancake and this one is our favorite and seems to work best for us.

Whole Wheat Blender Pancakes

Blend on high in blender for 2 minutes:

  • 1 cup whole wheat kernels
  • 1 cup milk

Add the following and blend for 2 more minutes:

  • 1/2 cup milk
  • 2 eggs
  • 1/3 cup oil
  • 1 t salt
  • 1 T honey or sugar

Just before frying on hot griddle, add:

  • 1 T baking powder
  • additional liquid to desired consistency(if needed)
