Strawberry Salsa with Cinnamon Pie Crust Chips

I found this recipe at Crazy for Crust.  We LOVE strawberries at our house!!  SO....when I saw this recipe I knew we would need to try this at our house!!  AND....just as I thought....it is/was delicious :)
 
Strawberry Salsa with Cinnamon Pie Crust Chips
 
Strawberry Salsa
Ingredients:
1 1/2 cups diced strawberries
1-2 teaspoons of sugar, (I used 1 teaspoon)
1 teaspoon orange juice
1 Tablespoon frozen limeade concentrate (thawed)
zest of 1/2 of a lime
 
Directions:  Mix all ingredients together.  Serve and enjoy!!
 
Cinnamon Pie Crust Chips
Ingredients:
2 pie crusts (homemade or from the refrigerated section at the grocery store)
melted butter (I used 2-3 Tablespoons....I love butter)
1/3 cup cinnamon sugar (I also really love cinnamon sugar)
 
Directions:  Preheat oven to 400 degrees.  Brush melted butter onto your pie crusts, sprinkle with cinnamon sugar.  Cut your pie crust into strip and then into triangles, a pizza cutter works great for this.  Line 2 large baking sheets with parchment paper or aluminum foil and place your 'chips' on the baking sheet.  Bake for 6-8 minutes.  Serve and enjoy!

**I used more butter and cinnamon sugar than crazy for crust.  Feel free to cut back, if you would like.

Restaurant Style Salsa

I LOVE salsa!!  I mean...is there any better way to eat your veggie?  I don't think so.  I got this recipe from The Pioneer Woman's Blog.  So good!!  My boys had to add a little Cayenne to theirs for a little extra heat.  My boys don't think it is salsa unless it clears your sinuses and makes your eyes water :)

Restaurant Style Salsa

Ingredients:
1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
1/4 cup Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
1/4 teaspoon Sugar
1/4 teaspoon Salt
1/4 teaspoon Ground Cumin
1/2 cup Cilantro (more To Taste!)
1/2 whole Lime Juice

Directions:
Note: this is a very large batch. Recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.

Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you'd like---about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

Salsa / Pico

I made this salsa/pico to go with the shredded beef taquitos that I made the other night. I wanted to make some pico, but didn't want to hand chop the veggies.....so I made a salsa pico combo.

Salsa/Pico

Ingredients:

  • 1/2 bunch cilantro
  • 3 green onions, including green part
  • juice of 1 lime
  • 1 jalapeno pepper
  • 3-4 tomatoes (I can't remember how many I used, start with 3 and add 4 depending on how you like it)
  • 1 avocado
  • 1/2 t garlic salt
  • 1/2 t Lawry's seasoning salt
  • 1/4 t ground cumin
  • 1/4 t cayenne pepper

Directions: Add cilantro to a food processor and pulse until it is chopped fine. Add green onions, lime juice, and jalapeno, pulse until chopped. Add tomatoes, avocado and spices and pulse until tomatoes and avocado are desired consistency.

More Salsa

Is there any better way to eat your veggies? Salsa is one of my favorite foods!! I could eat chips and salsa or fresh tortills with salsa all day long! This is the salsa that I make all the time! I usually use canned tomatoes, unless I have fresh tomatoes in the garden.

Salsa

Ingredients:

  • 1/2 green bell pepper
  • 1/2 jalapeno
  • 3-4 scallions
  • 1 bunch of cilantro
  • 2 cans tomatoes w/green chili
  • 1 sm. can green chili
  • 1/2 T. garlic salt
  • 1/2 T. seasoning salt
  • 1 t. crushed red pepper
  • 1/2 - 1 t. cayenne pepper

Directions: I add everything to the food processor and pulse a few times until desired consistency.

Homemade Salsa



This recipe doesn't make very much, so if you are a salsa lover like me you may want to double or even triple it. I could eat this whole batch by myself in one sitting.

Recipe:
Juice of 1 Lime
1 tsp. Garlic
1/4 to 1/2 white onion (depending on size and personal taste)
Bunch of cilantro
1/2 tsp. Cayenne Pepper
1 14 oz can tomatos with green chilis
Salt and Pepper to taste

I do this in my food processor. I add all ingredients but the tomatos and blend away. Once everything is chopped, I add the can of tomatos and pulse till they are chopped.
