Cinnamon Pull-apart Bread

We had homemade pizza for dinner a couple of weeks ago.  I had some extra dough, so we made cinnamon pull-apart bread.  It is easy and yummy.  I probably make this once a month or so.  I usually use this bread recipe and make one loaf of regular bread and one loaf of the cinnamon pull-apart bread.


I just roll my dough out into a rectangle, I don't really measure, smear it with butter...sprinkle on the cinnamon sugar, cut it into strips, stack it and cut it into strips again.  


Place it into a bread pan.  For the ends of your pan you want to place the cinnamon sugared side of the dough towards the middle, not touching the pan.  I scoop up any of the cinnamon sugar that fell out while transferring it to the pan and just dump it on top.


Let it rise.....Bake it, drizzle with frosting or sweetened condensed milk and enjoy!!

Cinnamon Pull-apart Bread, makes two loaves

Ingredients:
1 cup warm water
1 cup warm milk
1/3 cup sugar
1 package yeast(2 1/4 teaspoon)
1/3 cup oil
1/2 T salt
1 egg
4-6 cups flour
4 T butter
1/3 cup brown sugar
1/3 cup sugar
1/2 T cinnamon
Glaze - below (optional)
Sweetened condensed milk (optional)

Directions:  In mixer combine yeast, sugar, and warm water; let grow until bubbly(about 5 minutes). Add milk and mix.  Slowly add 2 cups flour, mix and then add salt.  Mix in oil and egg.  Add 1/2 cup flour at a time until it comes away from side of bowl.  I continue to 'mix' my bread in my mixer(with bread hook or attachment) for 5-6 minutes to 'knead' it.  Let rise in mixing bowl, until doubled for about 30 minutes. 

Grease a bread pan, ~9x5x3" and set it aside.  Mix brown sugar, sugar, and cinnamon together and set aside.Divide dough in half, this recipe will make 2 loaves.  On a lightly floured surface roll 1 section of dough into ~10x14 inch rectangle(this is totally an estimate...just roll it into a rectangle :)).  Brush dough with 2 T of melted butter, sprinkle with half of your cinnamon mixture.  Cut length-wise into 3 strips.  Place strips on top of each other and cut into ~5-6 strips(I like to use a pizza cutter to slice my dough).  Place your strips side by side in bread pan.  For the ends of your pan you want to place the cinnamon sugared side of the dough towards the middle, not touching the pan.  Cover with greased plastic wrap(I like to spray one side of my plastic wrap with cooking spray, so that it doesn't stick to the dough).  Let rise 30-40 minutes.  Bake at 350 degrees for 25-30 minutes....Repeat with the rest of your dough.

**Don't stack your dough into your bread pan too tight or it won't cook thoroughly in the middle.  It will be doughy.

Remove from oven.  When it is cool enough to handle, dump it out onto a plate, cutting board or platter(I always flip mine over...so top or bread pan side up).  Drizzle with a glaze or with sweetened condensed milk.  Pull-apart and enjoy!

Glaze:  In a small bowl whisk together powdered sugar, vanilla and enough milk to make a glaze of drizzling consistency.

Strawberry Salsa with Cinnamon Pie Crust Chips

I found this recipe at Crazy for Crust.  We LOVE strawberries at our house!!  SO....when I saw this recipe I knew we would need to try this at our house!!  AND....just as I thought....it is/was delicious :)
 
Strawberry Salsa with Cinnamon Pie Crust Chips
 
Strawberry Salsa
Ingredients:
1 1/2 cups diced strawberries
1-2 teaspoons of sugar, (I used 1 teaspoon)
1 teaspoon orange juice
1 Tablespoon frozen limeade concentrate (thawed)
zest of 1/2 of a lime
 
Directions:  Mix all ingredients together.  Serve and enjoy!!
 
Cinnamon Pie Crust Chips
Ingredients:
2 pie crusts (homemade or from the refrigerated section at the grocery store)
melted butter (I used 2-3 Tablespoons....I love butter)
1/3 cup cinnamon sugar (I also really love cinnamon sugar)
 
Directions:  Preheat oven to 400 degrees.  Brush melted butter onto your pie crusts, sprinkle with cinnamon sugar.  Cut your pie crust into strip and then into triangles, a pizza cutter works great for this.  Line 2 large baking sheets with parchment paper or aluminum foil and place your 'chips' on the baking sheet.  Bake for 6-8 minutes.  Serve and enjoy!

**I used more butter and cinnamon sugar than crazy for crust.  Feel free to cut back, if you would like.

Cinnaburst Bread

 Have you ever had Great Harvest's Cinnaburst Bread?


It is seriously one of my FAVORITE things!!  When I saw this recipe for a copycat version, I knew I had to try it!!  This recipe is simple and seriously SO good!!  I don't have a Great Harvest Bread Co. close by, so I will be satisfying my craving with this recipe from now on :)  I was able to get cinnamon chips from my local grocery store, but I haven't seen them there before...might be a seasonal thing.  I know that my sister has bought them from Target before, not during the Christmas season.

Great Harvest Cinnaburst Copycat Bread

Ingredients:
1 cup warm water
1 cup warm milk 
1/3 cup sugar
2 1/4 teaspoon yeast (1 packet)
1/3 cup oil (I used canola oil)
1/2 T salt
1 egg
4 1/2 to 5 1/2 cups all purpose flour
1 cup cinnamon chips
Directions:  In mixer combine yeast, sugar, and warm water and milk; let bubble for about 5 minutes.  Add in oil and egg.  Slowly add 2 cups flour, mix and then add salt.  Add 1/2 cup flour at a time until it comes away from the side of the bowl.  Add the cinnamon chips when it gets close to the right consistency.  The dough will be very sticky, but the softer the dough the lighter the bread.  So use the least amount of flour you can handle.  Let rise in mixing bowl for about 30 minutes.  Divide dough in half and form into loaves.  Put loaves into greased bread pans.  Let rise an additional 30 minutes.  I spray one side plastic wrap with cooking spray and set that over the dough while it rises.  Because it is sprayed it won't stick when you pull it off to bake it.  Bake at 350 for 30 minutes.
Makes 2 loaves.

Red Hot Cinnamon Candy Popcorn



My sister told me about this recipe. She found it here at cdkitchen. This popcorn is SO yummy!!



Red Hot Cinnamon Candy Popcorn

Ingredients:
6 quarts popped popcorn
12 oz red cinnamon candies (red hots)
sugar
1 cup butter
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda

Directions: Spread popcorn in a lightly buttered roasting pan; bake at 250 degrees while you prepare the syrup. Pour the cinnamon candies into a 2 cup measuring cup(I used my liquid measuring cup). Fill the remaining space up to two cups with sugar. Place in a heavy pan. Add butter, corn syrup and salt. Bring to a boil; boil for 5 minutes.

Remove from heat; carefully stir in baking soda. Pour over popcorn stirring to coat. Continue to bake at 250 for 1 hour, stirring every 15 minutes. Remove from oven, stir one last time; let cool. Break into pieces; store in an airtight container.

Monkey Muffins - with apple pie filling


This WONDERFUL recipe comes from The Pioneer Woman. These are SO yummy!! I used the white bread recipe that I posted last. The last time I made these I added some apple pie filling in with the balls of dough before I let them rise. I was canning apple pie filling and applesauce a couple of weeks ago and decided to try some of the apple pie filling in these and it was so good!! I got the apple pie filling recipe here. Yum!! If you like apple pie filling...try this!!



Monkey Muffins

Ingredients:
Leftover Bread Dough (or Refrigerated Biscuit Dough, Cut Into Thirds)
  • Butter
  • Sugar
  • Ground Cinnamon
  • Sweetened, Condensed Milk

Directions: Preheat oven to 375 degrees. Add 1/2 teaspoon butter to muffin tins. Sprinkle in sugar and cinnamon.
Roll dough into walnut sized balls (or cut refrigerated biscuit dough into thirds). Place three into each muffin tin.
Top with 1/2 teaspoon butter. Sprinkle on more sugar and cinnamon. Allow dough to rise, if applicable, or just go ahead and bake for 15 minutes, or until golden and bubbly. Remove from oven and immediately drizzle plenty of sweetened condensed milk over the top of each one. Be generous! Allow rolls to sit for a little while to absorb the sweet, sticky milk.

If you want to add the apple pie filling, chop the pie filling and add in with the rolls of dough. Repeat the other steps as described above.

The pictures above are not made in muffin tins, but little ceramic Christmas ornament dishes that I bought from Micheal's last Christmas season. I thought I had taken pictures the the 'muffins' I had made, but...guess not.
